《斯卡布罗集市》原是一首古老的英国民歌，其起源可一直追溯到中世纪。它曾被英国民歌之父麦考选进他编辑的一本介绍英国民歌的书中。
后来英国民歌手马汀·卡西（Martin Carthy）在原歌的基础上加进了自己的再创造，把它变成了一首爱情歌曲。西蒙在英国师从卡西那里学会了这首歌。他又再创造性地把自己写的一首反战歌曲《山坡上》（The Side Of A Hill）作为副歌和这首歌混在一起。
《斯卡布罗集市》的第二句唱到了四种花朵，香芹、鼠尾草、迷迭香和百里香(Parsley, Sage, Rosemary and Thyme)，分别代表爱情的甜蜜，力量，忠诚和勇气。
而目前《斯卡布罗集市》最著名的版本，也就是西蒙与加芬克尔（Simon and Garfunkel）为电影《毕业生》所创作的主题曲(当年曾超过了披头士乐队的白色专辑，登上了1968年畅销歌曲排行榜的榜首)，主要使用了“原版”中“Parsley, Sage, Rosemary and Thyme”这一小部分。
